Mom said, darn delicious. start cooking.

Yes, I made that. actually cooked to impress mom the last week-end. Target achieved. This is the first time ever in my life mom-the-sexy said start cooking. Oh! The Excitement, almost forgot to name the recipe.  The Vegetable is called Potals in Telugu. Pointed gourd in English. The fry i cooked is called Potals Fry. Easy, crisp and simple.

Ingredients for Potals Fry :
  • 500gms Potals chopped.
  • One tea spoon Zeera
  • One tea spoon mustard
  • one tea spoon salt
  • 1/2 tea spoon turmeric or just a pinch for color
  • pinch of red chilli powder.
  • 2 green chillies
  • 2 dry Red chillies
  • a few curry leaves
  • One large Onion.
  • 4 large garlic cloves smashed
  • 1 table spoon grated ginger
  • 1/2 cup of freshly grated coconut.
  • dry roasted peanuts.
  • oil to fry.
Process to fry it off : Take a fry pan on medium heat with 4-5table spoons of oil (used sunflower oil), you can use olive or veg oil. First mustard seed in, followed by zeera, red chillies, curry leaves, grated ginger and smashed garlic, once you start smelling the tempering add the chopped onions, as they start to caramelize add chopped potals. Let them cook on medium heat for 5 min; then add pinch of chili powder, turmeric, 2 sliced green chillies, salt. let it fry for 5 more minutes on medium flame. Just taste, the potals, i like them with a bit of crunch. Taste and see you like the crunchy way or softened, if soft leave for 5 more minutes. Just before taking away from the flame add the freshly grated coconut.  Yumm.  Potals FRy Ready. Just before serving add the dry roasted pea nuts.

P.S :  This Fry tastes delicious with South Indian Sambar. You can even try it between white bread slices, slightly roasted with butter, yummy and crunchy. Next day break fast. No judging. I am a lazy girl.

Wise option on a Wednesday, just Experiment. First you will definitely burn to learn.
xoxo

Good for you! My poor daughter...every times she cooks in the kitchen...I am hovering around telling her not to cut herself or burn herself. Isn't it wonderful to make those first dishes that impress...your mother!
